Amboy is a city in Blue Earth County, Minnesota, United States. The population was 534 at the 2010 census. It is part of the Mankato–North Mankato Metropolitan Statistical Area. The city was founded in 1879. It celebrated its 125th anniversary in September, 2004.

As of the census of 2010, there were 534 people, 232 households, and 157 families residing in the city. The population density was 1,722.6 inhabitants per square mile (665.1/km2). There were 260 housing units at an average density of 838.7 per square mile (323.8/km2). The racial makeup of the city was 96.8% White, 1.3% African American, 0.2% Native American, 0.4% Asian, 1.1% from other races, and 0.2% from two or more races. Hispanic or Latino of any race were 5.1% of the population.

There were 232 households of which 26.3% had children under the age of 18 living with them, 55.2% were married couples living together, 8.6% had a female householder with no husband present, 3.9% had a male householder with no wife present, and 32.3% were non-families. 28.9% of all households were made up of individuals and 11.6% had someone living alone who was 65 years of age or older.
