The site of Grapeland started to become a destination for pioneers around 1872, due to the establishment of the Houston and Great Northern Railroad Company. In particular, it became a crossroads between routes from Trinity to Augusta, and from Palestine to Crockett. Originally, the town was called "Grapevine," referring to the vines that had to be cut to make way for the railway tracks.

As of the census of 2000, there were 1,451 people, 583 households, and 377 families residing in the city. The population density was 733.5 people per square mile (282.9/km²). There were 726 housing units at an average density of 367.0 per square mile (141.6/km²). The racial makeup of the city was 63.27% White, 34.94% African American, 0.62% Native American, 0.07% Asian, 0.07% Pacific Islander, 0.83% from other races, and 0.21% from two or more races. Hispanic or Latino of any race were 1.65% of the population.

There were 583 households out of which 27.8% had children under the age of 18 living with them, 43.1% were married couples living together, 19.2% had a female householder with no husband present, and 35.2% were non-families. 34.3% of all households were made up of individuals and 20.6% had someone living alone who was 65 years of age or older. The average household size was 2.39 and the average family size was 3.08.
